Tomato-Basil Chicken Bowl
This may be inspired by the fact that I am going to Italy in just 1 week or maybe it’s because I am always looking for ways to get more protein into my diet in delicious ways. Either one is a good enough reason for you to try this recipe.
I called it Tomato-Basil Chicken Bowl and you may be thinking it is in a bowl, but quite literally the bowl is made of ground chicken.
This fast and easy recipe is a great stand alone dish or put it inside a bun and it serves as a tasty burger!
What I used:
-1 lb ground chicken cut into 4 equal portions
-1/2 chopped white onion
-2.5 cups chopped cherry tomatoes
-1/2 cup chopped basil
-pinch of salt
-2 T olive oil
-4 T shredded cheese
What I did:
First I chopped all the veggies and the basil and mixed them together. I sprinkled it with salt, drizzled with the olive oil and mixed it all together. I then formed the 4 equal sections of the ground chicken into meatballs but then flattened them down. Using a seltzer water can as a mold, I placed the can on top and formed a bowl out of the meat around the bottom of the can. I filled each bowl with the veggie mixture, sprinkled the top with 1 T of shredded cheese and baked in the air fryer at 380 for 12 minutes!
They were perfect!!
