Easy & Clean Stuffed Peppers
This recipe is so easy and I especially love that there are just 8 ingredients. It is a perfect recipe to make and have on hand for dinner on those nights that I teach late.
Here is what I used:
3 peppers (whatever color you like)
2 cups chopped mushrooms
1 small chopped onion
2 T olive oil
6 T tomato paste
2 cups of cooked rice (I like Trader Joe's frozen brown rice)
1 lb ground turkey
1 cup cheese
Here is what I did:
I first cut the peppers in half lengthwise and cored them using my favorite Global knife. I then steamed them for 5 minutes. While they steamed I heated to oil and sautéed the onion and mushrooms for about 3 minutes until soft. I added in the turkey and stirred until it was thoroughly cooked. Next came the rice and the tomato paste. I stirred until it was all blended. On a cooking sheet lined with tin foil (because I like an easy clean up) I stuffed the peppers, added the cheese and then baked at 350 until the cheese was melted.
Often times I will put it this directly into the fridge instead of the oven and cook them later for a pre-made dinner.
