Red Lentil Burgers

I have been meaning to make a red lentil burger for a long time and finally got around it today....and I am SO glad that I did.

These burgers are the right amount of spicy and have a subtle falafel flavor.

Here is what I used:

3/4 Cup red lentils

1 tsp olive oil

Olive oil spray

2 large cloves of garlic, chopped

1 large shallot, chopped

1 carrot, chopped

1/2 Cup gluten free panko bread crumbs

1 egg

1 tsp ground cumin

3 dashes of cayenne

1/2 tsp salt


Here is what I did:

I put the lentils in a medium saucepan, I covered them with cold water by two inches. I brought that to a boil, then reduced the heat to a simmer until the lentils were very tender.

I drained them very well.

I then preheated the broiler. While the lentils were simmering I sautéed the shallot for about 4 minutes until golden, added the carrot and garlic and continued to sauté until it was all softened. I added the cumin, cayenne and salt and removed from the heat.

Then I mixed together the lentils, shallot mixture, egg and bread crumbs. Mixed it well and formed 4 burgers.

I lined a cookie sheet with tin foil and sprayed it with olive oil spray. I placed the burgers on top and spritzed the top of them with the olive oil spray. I placed them under the broiler for 3 minutes on each side.
