Gluten Free Chocolate Protein Pancakes
I woke up the other day craving pancakes, but I always want to add protein to something like this so it feels a bit more balanced. SO....I did just that and they were delicious.
What I used:
1 1/2 C gluten free 1 to 1 flour
2 scoops of Orgain chocolate protein powder
1 1/2 C almond milk
2 eggs, at room temperature
1/4 C melted coconut oil
2 T maple syrup
1 t salt
4 t baking powder
Coconut oil cooking spray
What I did:
I whisked together all of the dry ingredients. In a separate bowl I whisked together all the wet ingredients. I then combined the two and mixed until smooth. I heated a griddle up, sprayed it with coconut oil spray and dropped 1/4 cup portions onto the hot griddle.
