Avocado Banana Ice Cream

Ever wonder what to do with those ripened avocados that you know will be past ripe by the morning??

I bought 6 avocados that seemed to go from rock hard to an inch within its life overnight. I was in a race to eat them (hence all the poached eggs on avocado toast posts last weekend). In a last ditch effort to not waste food I threw one in the blender with some frozen banana and some cacao beans and viola DESSERT!!

There is no need to add any sweetener. The cocoa adds a bit of texture that feels like chocolate chips. If you want a smoother texture substitute cacao powder.

What I used:

1 Ripe Avocado

2 Frozen Bananas

6 Cacao Beans

What I did:

I put all of the above in the blender. (I had to stop and scrape the sides and push it all back down again.) Blended for about 1 minute until it was smooth. Then put a dollop of coco whip on top!!
